Boxx Berry Farm U-Pick Blueberries
Blueberries are expensive...especially when you are capable of eating one pound in a night. So when I heard there was a u-pick blueberry farm not to far away, I had to go! Boxx Berry Farm is about 15 minutes away from our house, and also has u-pick flowers and raspberries. It's such a cute little place, I can't wait to make blueberry picking a yearly tradition!
After picking twelve pounds of blueberries (!!!), I put most of them in the freezer, some in the fridge and rest into a blueberry cobbler. I used this recipe, and it turned out so good (I added some cinnamon and cornstarch to the blueberry mixture).

Amber came to visit Saturday and we spent the day hunting for a table, eating blueberries, laying in the sun and watching Breaking Bad. She always looks so cute, so of course we had to snap a few pictures too.
Today Tommy and I are off to pick a bunch of blueberries! I'm so excited to have my freezer and fridge full of deliciousness. On Wednesday we are heading to Seattle to see Sigur Ros, and then on Saturday I'm attending a wedding! Got a good week ahead of me.

Hope you all are having a lovely Sunday! Today is nice and warm in Bellingham, and I have the day off! I'm planning on getting a little sunshine and possibly going to go see the Dark Knight. Have you seen it, what do you think? I can't wait to see Anne Hathaway play cat woman, from the previews she looks amazing.
1. Enjoyed some biscuits and honey at Diamond Jim's Grill. Tommy and I love this place, their biscuits are so delicious!
2. My dad came up to celebrate his birthday with Tommy and I, and we had a great time enjoying some beer and food at Boundary Bay Brewery.

4. I took Atticus outside to explore a bit, and while he slowly got more comfortable, at first he didn't want to touch the grass!
5. I have been on a big oatmeal kick lately. Love to eat it while watching Downton Abbey :).

I'm writing this post while watching the women's gymnastics. Holy cow these girls are amazing! Especially Gabby Douglas, and what a cutie! Gymnastics is definitely my favorite summer Olympic sport; I remember watching them when I was young and wanting to be those girls so bad.
Atticus is getting so big already! His body has gotten longer, his face is more cat-like, and he is becoming more independent. He is also getting a lot more frisky, which is fine except he enjoys clawing at your feet. I'm sure he will grow out of it, but gosh it's irritating!
Today I'm working all day, and then heading down to Seattle to watch Tommy's band, The Social Schema, play a show tomorrow. Love watching my man on stage!

Kiwi & Mint Ice
Making ice cubes is a great way to make flavorful water in small batches. Here is one of my favorite flavor combinations!
You need:
2 Kiwis
Lemon Juice
1. Cut the kiwis in half, and scoop out the fruit. Cut halves into four slices and place into ice cube tray.
2. Tear mint leaves into smaller pieces and place on top of kiwi.
3. Drizzle mint and kiwi with lemon juice.

4. Gently pour in water.
5. Using a fork, press kiwis in order to get some juice out. This will help give your water a kiwi flavor!

Pina Colada Popsicles
I have been dying lately to make some popsicles, but who knew it would be so hard to find popsicle molds? I finally landed my hands on some, and decided to whip up a few inspired by my favorite tropical drink!
You need:
1/2 cup of vanilla yogurt (pineapple flavor would be great too!)
1 cup coconut milk (I used the low fat version)
1 cup pineapple
coconut shavings (optional)
sweetener (optional)
1. Place ingredients in blender and blend until pineapple is almost smooth.
2. Stir in coconut shavings to taste, and add sweetener if desired.
3. Place in popsicle mold for several hours or overnight.
4. When you're ready to eat, run mold under hot water. The popsicles will pop right out!

Fiona Apple at the Paramount Theatre
Hands down, Fiona Apple is my favorite musical artist. I have loved her since about 8th grade, and while other artists have fallen of my radar, she continues to amaze me. The last time she toured to Seattle was seven years ago with Damien Rice. It was such a beautiful show, and me and my friends were lucky enough to score second row tickets. So you can bet when I heard she was touring to Seattle again, I jumped on it!
This time I didn't score second row tickets, but it really didn't matter. The show was incredibly powerful, with plenty of older songs from Tidal and When the Pawn, to satisfy the diehard fans. Opening with "Fast As You Can," Fiona started strong and didn't let up. It's amazing how such a voice can come from such a little woman! I was also happy the show was at the Paramount Theatre, because it's such a beautiful venue.
Originally we had planned on getting up early, and spending the day in Seattle. Unfortunately, these plans didn't work out. We first had to stop at Tommy's parents house, then mine, and by that time we didn't head down to Seattle until late. Got stuck in traffic for about an hour (yuck), so by the time we got downtown we had about an hour before the doors opened. Just enough time for a few appetizers and drinks!
