Green Tea & Coconut Donuts


Aren't donuts just the cutest? They are such happy little morsels, and it makes me really happy to bake them. Watching them puff up in the pan, and then decorating them with frosting and toppings...yep, I love donuts.

These green tea donuts are incredibly moist, and full of green tea flavor. The toasted coconut on top gives them a little texture. I have been trying to incorporate more coconut oil in my cooking/baking, and it really gives these donuts some extra coconut taste.





Green Tea and Coconut Donuts
2 1/2 cups Flour
1 tsp. Baking Soda
1 tsp. Baking Powder
1/2 tsp. Salt
2 tsp. Matcha Powder
1 Egg
3/4 cup Sugar
1/2 cup Coconut Oil (melted)
3/4 cup Coconut Milk
1 tsp. Vanilla Extract

Frosting
1 cup Powdered Sugar
2 tsp. Matcha Powder
3 tbs. Coconut Milk

1. Preheat oven to 350 degrees. In a bowl, combine the flour, baking soda, baking powder, salt and matcha powder. Whisk together.
2. In a stand mixer, beat egg. Add sugar, coconut oil, coconut milk and vanilla extract. Mix until thoroughly combined.
3. Slowly add the dry ingredients into the wet ingredients, stirring until just combined.
4. Spoon batter into donut pans until about 3/4 full, and place in the oven. Let bake for about 15 minutes, or until slightly golden and a toothpick is clean when inserted in the center.
5. While donuts cool, make the glaze. Combine the powdered sugar, coconut milk and matcha powder. Use a whisk to combine. Once donuts are cool, spoon the frosting on top. Sprinkle toasted coconut on top, and enjoy!
