Whoever invented bread pudding is an evil genius. I mean, it's pudding...made with bread. Yes, please! It's definitely not a dessert you should eat all the time, but every now and then you gotta treat yourself. Bread pudding is a comforting, rich, decadent treat for sure!
Because I'm in full pumpkin mode (along with the rest of internet), I knew I had to use some pumpkin puree in this bread pudding. I also had some extra chocolate chips, so why not throw them in too? This pudding is full of pumpkin flavor, melty chocolate chips and when topped with vanilla ice cream, simply perfect!
Pumpkin Chocolate Chip Bread Pudding
7 cups cubed stale french bread
2 cups half and half
1 1/4 cup pumpkin puree
1/2 cup semi-sweet chocolate chips
3 egg yolks
1 egg
1/3 cup sugar
1 tsp. pumpkin spice
1 tsp. vanilla extract
1. Preheat oven to 400 degrees. In a large bowl mix half and half, pumpkin puree, egg and egg yolks, brown sugar, vanilla and pumpkin spice. Whisk together until well combined. Mix in chocolate chips.
2. Place bread into a greased baking pan (I used a 9x9) and pour half and half mixture over the bread. Let sit for about 5 minutes. and use a spoon to gently press the bread to make sure all bread is coated.
3. Cover with foil and bake for 40 minutes. Remove from oven and serve warm.
